What type of cookies are cookie cutter compatible?
I love to bake around the holidays with the younger kids in my family. Everyone enjoys making the cool shapes with cookies cutters and decorating them... but no one ever eats them and they get thrown away. If we make chocolate chip cookies or oatmeal cookies they get devoured instantly, but no one likes sugar cookies.Obviously, you can't use cookie cutters on these types of cookies so I'm asking what kind of cookies, other than sugar cookies, you CAN use cookie cutters on. you CAN use cookie cutters on... :
Butter Cookies :
2 cups unsalted butter, slightly softened
1 1/2 cups sugar
4 egg yolks
2 teaspoons pure vanilla extract
4 1/2 cups unbleached flour
1/2 teaspoon salt
how to:
-- Preheat oven to 350.
-- With an electric mixer, even the hand-held kind, cream together butter and sugar. Add egg yolks and vanilla, mix well. Sift flour and salt together and beat into butter mixture until well mixed.
-- When ready to bake use an ungreased cookie sheet (I use my Silpat liners, but not required...) and place cookies about one inch apart.
-- Bake for about ten minutes, but do not brown them. Remove cookies from cookie sheet while still warm and cool on sheets of waxed paper.
** I’ve been making these delicious, easy butter cookies for years.
It can be anything—twist this dough into candy canes, roll it out (chill it mercilessly first) and use your cookie cutters, put it in a pastry bag and squirt it through a # 2 star tip, or roll it all into one giant snake, roll it in sprinkles or mini chips or coconut and slice and bake into perfect rounds….you get the idea.
!!! The dough does need to be really well chilled to work with, though. All that butter, you know.

Dutch Spice Cookies :
1 cup butter, softened
1 1/2 cups packed brown sugar
1 egg
3 1/2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon ground cloves
how to:
-- Put butter in a large mixing bowl and beat for 30 second with an electric mixer on medium speed. Add brown sugar and beat until fluffy. Add egg and beat well.
-- In a separate mixing bowl stir together flour, cinnamon, nutmeg, and cloves.
-- With mixer on low speed gradually add flour mixture to butter mixture, beating until well mixed. Cover and chill in the refrigerator for 1 hour or until dough is firm enough to handle.
-- Preheat oven to 350 degrees.
-- Roll the dough into 1-inch balls. Place balls about 2 inches apart on ungreased cookie sheets.
-- Flatten with a floured cookie stamp or the bottom of a drinking glass with a design in it.
-- Bake for 8 to 10 minutes or until light brown on bottom. With pancake turner lift cookies onto a cooking rack to cool.
** These are particularly good with nuts or dried cherries pressed into the tops of the cookies...

Thumbprint Cookies :
-these are fun to make too-
2 1/2 cups flour
3/4 cup granulated sugar
1 cup butter, softened
1 teaspoon almond extract
2 teaspoons vanilla
chopped nuts
jam
how to:
-- Use an electric mixer and beat the butter at medium speed until creamy. Then add sugar, flour, vanilla, and almond extract, blending well.
-- Chill the dough for 2 1/2 hours; then form it into small balls and roll them in the nuts.
-- Place the balls on a lightly greased cookie sheet. Make an indentation with your thumb and fill it with jam.
-- Bake at 300 degrees for 25 to 35 minutes until firm and light brown on the bottom.

Classic Sugar Cookies :
1 cup butter, softened
1 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
3 cups all-purpose flour
1 1/2 teaspoons baking powder
how to:
-- Beat together butter and sugar until fluffy. Add egg and vanilla, mix. Add flour and baking powder gradually. Continue to mix with mixer until combined, even if mix seems dry.
-- Divide the dough into four parts, shape into four circles, wrap with plastic wrap and chill in the refrigerator for an hour or until firm.
-- Preheat oven to 375 degrees. Lightly grease sheet pan with Crisco.
-- Roll out dough with rolling pin, lightly dusting with flour. Cut out shapes with cookie cutters and place on baking pans.
-- Bake for 7 minutes or until edges of cookies are light brown. Remove from oven, cool briefly, then put on plate. Ice after completely cooled.
** Cookies iced with the hard icing you get when you mix confectioner’s sugar and a few drops of milk... and then brighten the mixture up with a few drops of food coloring!!!
